Western Foodservice & Hospitality Expo Introduces What's Next in Fine Dining

Panel of Top Chefs, Restaurateurs and Industry Experts -
Moderated by Brad Metzger

Los Angeles, July 28, 2010 -- Reed Exhibition Companies, producers of the Western Foodservice & Hospitality Expo introduces What's Next in Fine Dining; a panel of top chefs, restaurateurs and industry experts. This session will take place Sunday, August 15, 2010, from 2:00 pm to 3:00 pm in the Ferdinand Metz Foodservice Forum. Our panel includes: rising star Brendan Collins, chef proprietor of Waterloo and City; Caroline Styne, co-owner and Sommelier of Lucques, AOC and, her latest venture with Suzanne Goin, Tavern, which is essentially three restaurants under one roof; 2 star Michelin chef Josiah Citrin of Melisse; Sherry Yard, two-time James Beard winner and Exec Pastry chef for Wolfgang Puck Fine Dining; and Warren Schwartz who is bringing artisanal ingredients and chef driven cuisine to the masses at Westside Tavern. Margot Dougherty, former Food Editor for Los Angeles magazine and contributing editor for zesterdaily.com will weigh in with the "big picture" perspective on food trends and how LA is setting the standard for new ways to capture the fine dining guest. This will be one fast-moving and information-packed hour, moderated by fine dining hospitality recruiter Brad Metzger, owner of Brad Metzger Restaurant Solutions.

Chef topics will include some trends around sandwiches and pizza, bar menus, house-made charcuterie, cheese courses, hand-crafted cocktails, burgers, wine flights and small plates and how they have adapted their menus to continue thriving in this challenging economic climate.
